I am married and applying for a non immigrant "O" visa. Should I get a single or multiple entry?

If you can meet the financial requirement of having 400,000 Baht in a bank account or 40,000 Baht income per month or combination of both. Single as we will apply for your extension of stay permit here in Thailand. If you will be traveling in and out in the next 40 days we will get the reentry permit here as well.

Once you apply for the extension of stay permit, the multi entry part you obtained at the Embassy was just a waste of money.

Another way to look at it, you get nonimmigrant visa (full page in your passport) at the Embassy and the extension of stay is on the smaller stamp (the stamp you get when you enter Thailand). If you don't get a reentry permit on this entry stamp, if you leave Thailand, you have to start all over again on the extension of stay permit. When we do the extension of stay on the entry stamp for you, the initial visa stamp from the Embassy (full page in your passport) is not what the extension of stay is granted from, it’s on your entry stamp. Hence why you need to get a single entry “O” non immigrant visa.
